A Taste of Turkey Salads

Spinach or kale with garlic, herbs with plain yogurt.

  • Shred spinach or kale.
  • Steam spinach or kale.
  • Mix the steamed spinach or kale with garlic & pepper & other herbs.
  • Place in a dish let cool.
  • Cover with thin layer of plain yogurt.
  • Sprinkle paprika and other fresh herbs on top.

Cold runner/French bean and tomato salad

  • Simmer fresh tomatoes and garlic and herbs in a pan till soft.
  • Cut runner beans long ways and in shorter lengths, French beans just in shorter lengths.
  • Place beans in the pan with the tomatoes and herbs and simmer till beans are soft and cooked.
  • Place in a dish sprinkle fresh herbs, eat hot or cold as a salad.

Cucumber salad

  • Cut cucumber into cubes with skin on.
  • Mix with plain yogurt and serve.

Tomato, cucumber and onion salad

  • Dice tomatoes, cucumber and onion.
  • Toss in olive oil.
  • Serve.

Bean salad

  • Simmer fresh tomatoes and garlic and herbs in a pan till soft.
  • Add mixed cooked beans.
  • Place in a dish sprinkle on fresh herbs.
  • Serve cold.
